Ingredients for Angry Pasta
- 4 slices bacon
- Garlic Cloves
- 1 tablespoon olive oil (or reserved bacon grease)
- 1 (28 ounce) can crushed tomatoes
- Basil Leaves
- Red Pepper Flakes
- Penne Pasta
- Grated Parmesan cheese (amount to taste)
How to Make Angry Pasta
- Cook 4 slices of bacon in a large skillet over medium heat until crisp. Remove with a slotted spoon and place on paper towels to drain, reserving 1 tablespoon of bacon grease.
- Add 2 cloves of minced garlic to the skillet with the reserved bacon grease and sauté for 1 minute until fragrant.
- Stir in 1 (28 ounce) can of crushed tomatoes, 1/4 cup chopped fresh basil, and 1/2 teaspoon to 1 tablespoon red pepper flakes (adjust to your spice preference). Bring to a boil.
- Reduce heat and simmer for 15 minutes, stirring occasionally, to allow flavors to meld.
- While the sauce simmers, cook 1 pound of pasta according to package directions. Drain and reserve about 1/2 cup of pasta water.
- Add the cooked pasta to the sauce. Toss to coat, adding a little pasta water if needed to loosen the sauce.
- Serve immediately, topped with the crispy bacon and grated Parmesan cheese (amount to taste).
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
