How to Make Healthy Scalloped Potatoes
- Preheat oven to 350°F (175°C).
- Peel and thinly slice 2 lbs Yukon Gold potatoes. Thinly slice 1 medium yellow onion.
- In a large bowl, whisk together 2 tablespoons all-purpose flour and 1 tablespoon chopped fresh parsley.
- Layer half of the potatoes and onions in a greased 9x13 inch baking dish. Sprinkle with half of the flour-parsley mixture.
- In a saucepan, heat 2 cups skim milk, 1 tablespoon margarine, 1/2 teaspoon salt, and 1/4 teaspoon black pepper over medium heat until warm and margarine is melted. Do not boil.
- Pour half of the milk mixture over the potato and onion layer.
- Repeat layers with remaining potatoes, onions, and flour-parsley mixture.
- Pour remaining milk mixture over the top layer.
- Cover the baking dish with foil and bake for 60 minutes.
- Remove foil and bake for an additional 30 minutes, or until potatoes are tender and top is lightly browned.
