How to Make Amazing Mexican Rice
- Heat 1 tablespoon of oil in a medium saucepan over medium heat. Saute 1/2 medium onion, chopped, until softened (about 3 minutes).
- Add 1 cup long-grain white rice and 2 cloves garlic, minced, to the pan.
- Saute for 1-2 minutes, or until the rice is lightly toasted and translucent.
- Stir in 2 cups of chicken broth, 1 teaspoon salt, and 1/2 teaspoon black pepper. Increase heat to high and bring to a boil.
