How to Make Artichoke Dip
- Preheat oven to 325°F (160°C).
- Drain one (14 ounce) can of artichoke hearts and coarsely chop them.
- In a medium bowl, combine the chopped artichoke hearts, 8 ounces of cream cheese (softened), 1/2 cup mayonnaise, 1/2 cup grated Parmesan cheese, 1/4 cup chopped fresh parsley, 2 cloves minced garlic, and 1/4 teaspoon black pepper.
- Blend until smooth using an immersion blender or carefully in a regular blender. If using a regular blender, vent the lid slightly to avoid pressure buildup.
- Pour the mixture into an oven-safe dish (approximately 8x8 inch).
- Bake for 20-25 minutes, or until heated through and bubbly. Alternatively, microwave on high for 4-5 minutes, stirring once halfway through.
- Serve immediately with your favorite crackers or toasted bread.
