How to Make Beer Braised Rabbit Or Chicken For The Crock Pot
- Chop 1 large onion, 2 cups carrots (peeled and chopped), and 2 lbs potatoes (peeled and cubed).
- Season 1.5 lbs rabbit or chicken pieces generously with salt and pepper.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat. Brown the meat on all sides, ensuring a nice sear. Transfer the browned meat to your crock-pot.
- In a bowl, whisk together 1 cup beer (any kind you enjoy), 1/2 cup chili sauce, 1/4 cup brown sugar, and 2 cloves minced garlic.
- Pour the beer mixture over the meat in the crock-pot.

- If necessary, add beer, water, or broth to the reserved cooking liquid to reach 1 1/2 cups.
- Return the meat and vegetables to the crock-pot.
- In a small bowl, whisk together 1/3 cup water and 3 tablespoons all-purpose flour until smooth.
- Pour the flour slurry into the reserved cooking liquid in a saucepan. Cook over medium heat, stirring constantly, until the sauce has thickened to your desired consistency.
- Pour the thickened sauce over the meat and vegetables in the crock-pot.
- Serve hot, sprinkled with paprika and fresh parsley (optional).
