How to Make Au Gratin Chicken Broccoli
- Preheat oven to 400°F (200°C).
- Season 1.5 lbs boneless, skinless chicken breasts generously with salt and pepper. Heat 2 tablespoons olive oil in a large oven-safe skillet (cast iron is ideal) over medium-high heat. Add chicken and brown both sides for about 3-4 minutes per side.
- While chicken browns, prepare 2 lbs small red potatoes. Peel and cut into 1/2-inch thick slices.
- In a large bowl, toss potatoes with 3 tablespoons butter, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Arrange half of the potatoes in the bottom of the skillet around the browned chicken.
- Add 1 large head of broccoli, cut into florets, to the skillet, arranging it around the chicken and potatoes.
- Pour 1 cup heavy cream over the broccoli and potatoes. Sprinkle with 1/2 cup grated Parmesan cheese.
- Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender. If the top starts to brown too much before the chicken is cooked, loosely tent with foil.
- Remove from oven and let rest for 5 minutes before serving.
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
