Ingredients for Au Gratin Chicken Broccoli

  • Au Gratin Potato Mix
  • Canola Oil
  • Salt & Pepper
  • Boneless Skinless Chicken Breasts
  • Broccoli Florets

How to Make Au Gratin Chicken Broccoli

  1. Preheat oven to 400°F (200°C).
  2. Season 1.5 lbs boneless, skinless chicken breasts generously with salt and pepper. Heat 2 tablespoons olive oil in a large oven-safe skillet (cast iron is ideal) over medium-high heat. Add chicken and brown both sides for about 3-4 minutes per side.
  3. While chicken browns, prepare 2 lbs small red potatoes. Peel and cut into 1/2-inch thick slices.
  4. In a large bowl, toss potatoes with 3 tablespoons butter, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  5. Arrange half of the potatoes in the bottom of the skillet around the browned chicken.
  6. Add 1 large head of broccoli, cut into florets, to the skillet, arranging it around the chicken and potatoes.
  7. Pour 1 cup heavy cream over the broccoli and potatoes. Sprinkle with 1/2 cup grated Parmesan cheese.
  8. Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender. If the top starts to brown too much before the chicken is cooked, loosely tent with foil.
  9. Remove from oven and let rest for 5 minutes before serving.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
