How to Make Baby New Potatoes With Mint Bbq
- Scrub 1 pound of baby new potatoes thoroughly.
- Cut each potato in half (or quarters if large).
- In a large bowl, toss potatoes with 2 tablespoons of olive oil and 1/2 teaspoon of salt.
- Wrap potatoes tightly in a double layer of aluminum foil to create a sealed packet.
- Grill over medium heat for 20-25 minutes, or until the potatoes are tender and easily pierced with a fork. Flip the packet halfway through.
- Remove from grill and carefully open the foil packet. Transfer potatoes to a serving bowl.
