How to Make Baked Black Bean Veggie Burgers
- Preheat oven to 375°F (190°C).
- Thoroughly drain and rinse one (15-ounce) can of black beans. Pat them dry with a paper towel to remove excess moisture.
- In a large bowl, mash the black beans with a fork until a thick, pasty consistency is achieved.
- Finely chop 1/2 cup of bell pepper (any color), 1/4 cup of red onion, and 2 cloves of garlic. Gently stir these into the mashed black beans.
- In a separate small bowl, whisk together 1 large egg, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon smoked paprika, and 2 tablespoons of your favorite chili sauce.
- Pour the egg mixture into the bean mixture and stir to combine thoroughly.
- Gradually add 1 cup of breadcrumbs, mixing until the mixture becomes sticky and holds its shape well. You may need slightly more or less depending on the moisture content of your beans.
- Divide the mixture into four equal portions and shape them into patties about 1/2 inch thick.
- Lightly grease a baking sheet with cooking spray or olive oil.
- Place the patties on the prepared baking sheet.
- Bake for 15-20 minutes per side, or until heated through and slightly browned, flipping halfway through.
