How to Make Baked Macaroni And Cheese W Broccoli

  1. Preheat oven to 375°F (190°C).
  2. Coat a shallow 2-quart baking dish with cooking spray.
  3. Cook 1 pound of elbow macaroni in a large pot of lightly salted boiling water according to package directions. Add 1 cup of chopped broccoli florets to the water 3 minutes before the pasta is done.
  4. Drain the pasta and broccoli and return them to the pot.
  5. Meanwhile, in a large saucepan, melt 2 tablespoons of butter over medium heat.
  6. Add 1/2 cup of bread crumbs and cook, stirring often, until light golden, about 2 minutes.
  7. Remove from heat and transfer the crumbs to a small bowl. Stir in 1 tablespoon of grated Parmesan cheese and set aside.
  8. In the same saucepan, whisk together 2 cups of milk and 2 tablespoons of all-purpose flour until blended.
  9. Add 1/4 cup of finely chopped yellow onion.
  10. Bring to a boil over medium-high heat, whisking frequently.
  11. Reduce heat to low and simmer until thickened, about 2 minutes.
  12. Remove from heat and whisk in 1 1/2 cups of shredded cheddar cheese, 1 teaspoon of Dijon mustard, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper, plus the remaining 2 tablespoons of grated Parmesan cheese.
  13. Pour the cheese sauce over the cooked pasta and broccoli.
  14. Toss to mix and coat completely.
  15. Transfer to the prepared baking dish and sprinkle the top evenly with the bread crumb mixture.
  16. Bake until bubbly at the edges and lightly browned on top, about 20 to 25 minutes.
  17. Let cool slightly before dividing into 8 servings.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
