How to Make Barbecue Skillet Pork Chops
- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Season 4 pork chops (about 1 inch thick) with salt and pepper. Brown the chops in the hot oil for 2-3 minutes per side, until golden brown.
- Remove chops from skillet and set aside. Drain off excess oil, leaving about 1 tablespoon in the pan.
- Add 1/2 cup chopped celery and 1/2 cup chopped onion to the skillet and sauté for 3-5 minutes, until softened.
- Stir in 1/4 cup packed brown sugar, 2 tablespoons lemon juice, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon black pepper, and 1/4 teaspoon cayenne pepper (optional).
- Return pork chops to the skillet. Pour 1 (28 ounce) can of tomato sauce over the chops and vegetables.
- Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until the pork chops are tender, turning occasionally.
