How to Make Basmati Rice With Nuts And Spices

  1. Melt 2 tablespoons of butter in a medium saucepan over medium heat.
  2. Add 1 medium onion, chopped, and 2 cloves garlic, minced. Sauté for 5 minutes, or until softened.
  3. Stir in 1 cup of basmati rice and 1/2 cup mixed nuts (almonds, cashews, pecans – your choice!). Toast for 2 minutes, stirring constantly.
  4. Add 2 cups of vegetable or chicken broth, 1 teaspoon ground cumin, 1/2 teaspoon turmeric, 1/4 teaspoon cinnamon, and a pinch of saffron (optional).
  5. Bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes, or until all liquid is absorbed. Do not lift the lid during simmering.
  7. Remove from heat and let stand, covered, for 5 minutes.
  8. Fluff the rice gently with a fork.
  9. Stir in 1/4 cup chopped fresh parsley, 1 tablespoon lemon juice, 1/4 cup raisins, and salt and pepper to taste.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
