How to Make Bbq Potatoes On A Wet Plank
- Soak your cedar, maple, alder, or oak plank in water for at least 1 hour, or up to 24 hours.
- Pierce 4 medium-sized russet potatoes several times with a fork to allow steam to escape. Microwave on high for 16 minutes.
- Once cool enough to handle, carefully cut the potatoes in half lengthwise.
- Gently scoop out the cooked potato flesh, leaving about 1/4-inch of potato intact to form a shell.
- In a large bowl, combine the scooped potato with: 2 tablespoons butter or margarine, 1/4 cup milk, 1/2 cup shredded cheddar cheese, 2 tablespoons chopped chives or green onions, 1 clove minced garlic, 1/4 cup cooked bacon bits, salt and pepper to taste.
- Fill each potato shell generously with the mixture.
- Place the filled potato halves on the soaked plank.
- Preheat your BBQ to medium heat (approximately 350°F).
- Place the plank directly on the preheated grill grates and cook for 10-15 minutes, or until heated through and slightly charred.
- Alternatively, bake in a preheated 375°F oven on the wet plank for 15-20 minutes.
