How to Make Beef Broccoli Potato Casserole
- Preheat oven to 400°F (200°C).
- Thinly slice 2 lbs russet potatoes. Arrange them around the bottom and sides of an 8x12 inch casserole dish to form a crust.
- Bake uncovered for 10 minutes, or until the potatoes begin to soften and lightly brown.
- In a large bowl, combine 1 (10.75 ounce) can condensed cream of mushroom soup, 1/2 cup milk, and 1 cup shredded cheddar cheese. Stir until smooth.
- Add 1 lb cooked ground beef, 2 cups chopped fresh broccoli florets (or 1 (10 ounce) package frozen, thawed), and 1/2 can french fried onions. Mix well.
- Pour the beef and broccoli mixture into the prepared potato crust.
- Bake uncovered for 20 minutes.
- Sprinkle the remaining 1/2 cup shredded cheddar cheese and the remaining french fried onions over the top.
- Bake for another 2-3 minutes, or until the cheese is melted and bubbly. (Add 10-15 minutes to baking time if baking from frozen.)
- Let cool slightly before serving.
