How to Make Beef Broccoli Potato Casserole

  1. Preheat oven to 400°F (200°C).
  2. Thinly slice 2 lbs russet potatoes. Arrange them around the bottom and sides of an 8x12 inch casserole dish to form a crust.
  3. Bake uncovered for 10 minutes, or until the potatoes begin to soften and lightly brown.
  4. In a large bowl, combine 1 (10.75 ounce) can condensed cream of mushroom soup, 1/2 cup milk, and 1 cup shredded cheddar cheese. Stir until smooth.
  5. Add 1 lb cooked ground beef, 2 cups chopped fresh broccoli florets (or 1 (10 ounce) package frozen, thawed), and 1/2 can french fried onions. Mix well.
