How to Make Beef Rolls Rindsrouladen
- Prepare the filling: In a large skillet, cook 4 slices bacon, 4 chopped scallions, and 4 chopped carrots until bacon is crispy and vegetables are tender. Remove and set aside on paper towels.
- Prepare the beef: Gently pound 4 slices of beef (about 1/4 inch thick). Spread 1 tablespoon of mustard evenly on each slice.
- Assemble the rolls: Top each beef slice with 1 slice of cooked bacon, 3 chopped scallions, and 2 chopped carrots. Roll tightly and secure with toothpicks.
- Brown the rolls: Dust beef rolls lightly with 1 tablespoon flour, salt, and pepper. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Brown the rolls on all sides, seam-side down first.
- Simmer in broth: Remove beef rolls from skillet. Add 2 cups of beef broth, scraping up any browned bits from the bottom of the pan. Return beef rolls to the skillet.
- Slow cook: Reduce heat to low, cover, and simmer for 45-50 minutes, or until beef is tender, adding more broth if needed.
- Make the gravy (optional): If desired, thicken the sauce. In a small bowl, whisk together 1 teaspoon flour and 1 teaspoon mustard with 1/2 cup cold beef broth until smooth. Stir into the skillet and simmer for 5 minutes, or until thickened.
