- Cook 4 slices of bacon until crispy. Remove bacon and crumble, reserving for garnish. Leave the bacon grease in the pan.
- Add 1 diced medium tomato, 2 chopped scallions, and 1 teaspoon ground cumin to the pan.
- Sauté the vegetables in the bacon fat until softened, about 5-8 minutes.
- Add 1 (15-ounce) can of red kidney beans (drained and rinsed) to the pan.
- Stir in 1 teaspoon of sugar, 1/2 cup of water, and 1 chicken bouillon cube (or 1 teaspoon of bouillon powder).
- Bring to a boil, then reduce heat and simmer for 10 minutes, or until the sauce has thickened and most of the water has evaporated.
