How to Make Herb Infused Grilled Red Potatoes
- Preheat your grill to medium heat.
- Wash and halve or quarter 1 pound of red potatoes.
- Place the potatoes in a large aluminum foil tray (approximately 15x10 inches).
- Drizzle 1 tablespoon of olive oil over the potatoes and season generously with salt and pepper.
- Grill the potatoes for 20-25 minutes, turning occasionally, until they are almost cooked through and slightly browned.
- While the potatoes grill, prepare the herb mixture: In a large bowl, combine 2 tablespoons chopped fresh rosemary, 1 tablespoon chopped fresh thyme, 1 clove minced garlic, and 1 tablespoon olive oil.
- Remove the potatoes from the grill and add them to the bowl with the herb mixture. Toss gently to coat evenly.
- Return the potatoes to the foil tray and fold the foil over to create a sealed packet.
- Return the packet to the grill and cook for another 20 minutes, turning occasionally, until the potatoes are tender and the herbs are fragrant.
- Remove from grill, let rest for 5 minutes, then serve hot. Enjoy!
