How to Make Homemade Swedish Fish Candy
- In a medium bowl, whisk together 1 cup powdered sugar, 1/2 cup light corn syrup, and 1/4 teaspoon salt. Set aside.
- In a small saucepan, sprinkle 1 envelope (about 2 1/4 teaspoons) unflavored gelatin and 1 envelope (about 2 1/4 teaspoons) flavored gelatin (such as cherry or strawberry) over 1/2 cup cold water. Let it bloom for 5 minutes.
- Place the saucepan over medium-low heat and stir constantly until the gelatin is completely dissolved and the mixture is smooth. This should take about 5-7 minutes. Do not boil.
- Gradually whisk the gelatin mixture into the dry ingredients until well combined. Be sure to scrape down the sides of the bowl.
- Gently pour the mixture into your fish-shaped molds. If using silicone molds, tapping isn't necessary. If using hard plastic or metal molds, gently tap the molds on the counter to settle the mixture.
- Refrigerate for at least 4 hours, or preferably overnight, until firm. Silicone molds generally need less time than hard molds.
- Once set, gently remove the Swedish Fish from their molds. If they stick, run the mold briefly under warm water.
- Enjoy your homemade Swedish Fish immediately or store them in an airtight container at room temperature for up to a week.
