Ingredients for Italian Roast Pork Loin

  • Pork Loin Roast
  • 2 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • Onion
  • 2 tablespoons olive oil, plus 1 tablespoon for searing

How to Make Italian Roast Pork Loin

  1. Preheat oven to 350°F (175°C).
  2. Trim excess fat from the pork loin.
  3. In a small bowl, combine 2 tablespoons fresh rosemary (chopped), 4 cloves garlic (minced), 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 tablespoons olive oil. Mix well.
  4. Melt 2 tablespoons butter in a roasting pan. Spread 1 large onion (sliced) evenly over the melted butter.
  5. Rub the rosemary mixture all over the pork loin, ensuring it's evenly coated.
  6. Sear the pork loin on all sides in a hot skillet with 1 tablespoon of olive oil until lightly browned (about 2-3 minutes per side).
  7. Place the seared pork loin on top of the onions in the roasting pan. Cover the pan tightly with aluminum foil.
  8. Bake for 60 minutes. Remove the foil and continue baking for another 15-25 minutes, or until a meat thermometer inserted into the thickest part registers 160°F (71°C).
  9. To make the onion gravy: In a small bowl, whisk together 1 tablespoon all-purpose flour and 1 cup cold water until smooth. Set aside.
  10. Pour the pan drippings (including onions) from the roasting pan into a small saucepan. Bring to a gentle boil over medium heat.
  11. Gradually whisk in the flour and water mixture. Continue whisking constantly until the gravy thickens to your desired consistency (about 2-3 minutes).
  12. Serve the delicious Italian Roast Pork Loin with the onion gravy. Enjoy!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
