- Pork Loin Roast
- 2 tablespoons fresh rosemary, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- Onion
- 2 tablespoons olive oil, plus 1 tablespoon for searing
How to Make Italian Roast Pork Loin
- Preheat oven to 350°F (175°C).
- Trim excess fat from the pork loin.
- In a small bowl, combine 2 tablespoons fresh rosemary (chopped), 4 cloves garlic (minced), 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 tablespoons olive oil. Mix well.
- Melt 2 tablespoons butter in a roasting pan. Spread 1 large onion (sliced) evenly over the melted butter.
- Rub the rosemary mixture all over the pork loin, ensuring it's evenly coated.
- Sear the pork loin on all sides in a hot skillet with 1 tablespoon of olive oil until lightly browned (about 2-3 minutes per side).
- Place the seared pork loin on top of the onions in the roasting pan. Cover the pan tightly with aluminum foil.
- Bake for 60 minutes. Remove the foil and continue baking for another 15-25 minutes, or until a meat thermometer inserted into the thickest part registers 160°F (71°C).
- To make the onion gravy: In a small bowl, whisk together 1 tablespoon all-purpose flour and 1 cup cold water until smooth. Set aside.
- Pour the pan drippings (including onions) from the roasting pan into a small saucepan. Bring to a gentle boil over medium heat.
- Gradually whisk in the flour and water mixture. Continue whisking constantly until the gravy thickens to your desired consistency (about 2-3 minutes).
- Serve the delicious Italian Roast Pork Loin with the onion gravy. Enjoy!
