How to Make Noodles Continental
- Preheat oven to 350°F (175°C).
- Cook 1 pound egg noodles according to package directions. Rinse under cold water and drain well.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté 1 cup chopped onions and 8 ounces sliced mushrooms until softened, about 5-7 minutes.
- In a large bowl, whisk together 2 large eggs. Add 1 cup cottage cheese, 1/2 cup sour cream, 2 tablespoons chopped pimientos, 1 clove minced garlic, 1 teaspoon Worcestershire sauce, 1/2 teaspoon salt, 1/4 teaspoon black pepper, a dash of hot sauce (to taste), and 1/2 cup grated Parmesan cheese.
- Add the cooked noodles and the sautéed onion and mushroom mixture to the bowl. Stir gently to combine.
- Grease a 1 1/2-quart casserole dish. Pour the noodle mixture into the prepared dish.
- Sprinkle the remaining 1/2 cup grated Parmesan cheese over the top.
- Place the casserole dish in a larger baking pan. Pour 1 inch of hot water into the larger pan (this creates a water bath for even cooking).
- Bake for 30-35 minutes, or until heated through and golden brown on top.
