- Lightly grease a 6-inch square baking pan with butter or cooking spray. Wet a sharp knife or cookie cutter under cold water.
- Alternatively, prepare a silicone candy mold.
- In a medium saucepan, combine 1 (1 ounce) package unflavored gelatin, 1 cup granulated sugar, 1 cup strawberry puree (or raspberry/blackberry), and 2/3 cup water.
- Stir over medium heat until the sugar and gelatin are completely dissolved. Be sure to scrape the bottom of the pan frequently.
- Bring the mixture to a rolling boil, stirring constantly. Once boiling, reduce heat to low, cover, and simmer for exactly 5 minutes.
- Carefully pour the hot mixture into the prepared pan or mold. Allow to cool completely and set undisturbed for at least 4 hours, or preferably overnight, in the refrigerator.
- Once completely set, carefully run a thin knife or spatula around the edges of the pan to loosen the candy.
- Invert the pan or mold onto a sheet of waxed paper. Using your prepared wetted knife or cookie cutter, cut the candy into squares or desired shapes.
- Roll the individual candies in 1/2 cup granulated sugar or superfine sugar to coat evenly. Let the sugar set briefly before enjoying.
