How to Make 10 Grain Bread
- In a saucepan, combine 1 cup mixed 10-grain cereal and 1 1/2 cups water. Bring to a simmer over medium heat, then reduce heat and cook for 10 minutes, or until cereal is softened.
- (Optional) Allow the cooked cereal to cool completely. To speed up the process, transfer to a bowl, add 1/2 cup cold water and 2-3 ice cubes; stir and allow to cool.
- In a large bowl of a stand mixer, combine 1 cup warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
- Add salt, olive oil, cooked cereal, and milk (if using) to the yeast mixture. Mix well.
- Gradually add 4 cups of flour, mixing with the dough hook until a shaggy dough forms.
- Knead the dough with the dough hook for 2 minutes, until smooth and elastic.
- Place the dough in a lightly greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size. (Can be as short as 15 minutes in a pinch)
- Punch down the dough and divide it into 4 equal pieces (use a kitchen scale for accuracy).
- Shape each piece into a loaf and place them in greased 9x5 inch loaf pans.
- Let the loaves rise for another hour, or until doubled in size.
- Preheat oven to 400°F (200°C). Bake for 35-40 minutes, or until golden brown and the bottom sounds hollow when tapped.
- Remove loaves from pans and let cool completely on a wire rack before slicing and serving.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
