  • 3 lbs russet potatoes
  • Onion
  • 6 slices bacon
  • Mushroom
  • Cheddar Cheese
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup milk
  • 1/2 cup sour cream

How to Make 300 Lb Potatoes

  1. Peel and cut 3 lbs of russet potatoes into 2-inch chunks. Boil in salted water until tender (about 15-20 minutes).
  2. While potatoes boil, cook 6 slices of bacon, chopped into 1/2-inch pieces, in a large skillet over medium heat until slightly crisp. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon fat in the skillet.
  3. Add 1 medium onion, chopped, to the skillet with the bacon fat and saute until translucent (about 5 minutes). Remove and set aside.
  4. Add 8 ounces of sliced mushrooms to the skillet and saute until lightly golden (about 5-7 minutes). Remove and set aside.
  5. Once potatoes are tender, drain well and return them to the pot.
  6. Mash potatoes with 1/2 cup (1 stick) of unsalted butter, 1/2 cup of milk, and 1/2 cup of sour cream until smooth and creamy.
  7. Stir in the cooked bacon, sauteed onions, and mushrooms. Add 2 cups of shredded cheddar cheese (or your favorite cheese). Mix well.
  8. Transfer the mashed potato mixture to a greased 9x13 inch casserole dish.
  9. Bake in a preheated oven at 350°F (175°C) for 45 minutes, or until golden brown and bubbly.
