How to Make 4 Cheese Zucchini Bake
- Preheat oven to 350°F (175°C).
- Thinly slice 1 medium onion, 1 (28 ounce) can of diced tomatoes, and 3 medium zucchini.
- In a 9x11-inch baking dish, arrange half of the sliced onions, tomatoes, and zucchini in a single layer.
- Sprinkle evenly with half of 1 teaspoon of dried oregano and half of the cheese blend (see ingredients).
- Repeat layers with remaining vegetables, oregano, and cheese.
- If desired, sprinkle the top with 1/2 cup of breadcrumbs.
- Bake for 35-40 minutes, or until the cheese is melted, bubbly, and lightly browned.
