How to Make Beef In Pepper Sauce
- Set aside 1 tablespoon of tomato sauce from a 14.5-ounce can.
- In a food processor, combine 1 cup chopped green bell peppers, 1/2 cup chopped red bell peppers, 2 jalapeños (seeds removed for mild, or included for extra spice), 1/4 cup chopped onion, 2 cloves garlic, 1 tablespoon olive oil, 1 teaspoon ground cumin, and 1/2 teaspoon salt. Blend until completely smooth.
- Set the pepper sauce aside.
- Heat 2 tablespoons of olive oil in a pressure cooker over medium-high heat. Add 1.5 lbs beef stew meat, seasoned with 1 teaspoon salt and 1/2 teaspoon black pepper. Brown the beef on all sides.
- Add 1 cup of water, the reserved 1 tablespoon of tomato sauce, 1 teaspoon paprika, and 1/2 teaspoon cumin to the pressure cooker.
