How to Make 40 Minute Chili
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add 1 lb ground beef and 1 medium onion (chopped) and cook, breaking up the beef with a spoon, until browned (about 8-10 minutes). Drain off any excess grease.
- Stir in 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can kidney beans (drained and rinsed), 1 (15 ounce) can pinto beans (drained and rinsed), 1 (10 ounce) can diced tomatoes and green chilies (undrained), 1 cup beef broth, 2 tablespoons chili powder, 1 tablespoon cumin, 1 teaspoon oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon cayenne pepper (optional), and salt and pepper to taste.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for 30-45 minutes, or until the flavors have melded and the chili has thickened slightly. Stir occasionally.
