Ingredients for A Bit Of Everything Chicken Salad

  • Chicken Breast
  • Spinach
  • Lettuce
  • Red Grapes
  • Cherry Tomatoes
  • Apple
  • Orange
  • 1/4 cup cashews
  • 1/4 cup sunflower seeds
  • Raisins
  • Green Onions
  • 1 tablespoon lemon juice
  • Honey
  • Cayenne Pepper
  • 1/4 teaspoon salt
  • Poppy Seeds
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil

How to Make A Bit Of Everything Chicken Salad

  1. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Reserve 1/3 of the dressing for later. Marinate 1 pound boneless, skinless chicken breasts in the remaining dressing for at least 30 minutes (or up to 2 hours in the refrigerator).
  3. Preheat broiler. Place marinated chicken on a baking sheet and broil for 5-7 minutes per side, or until cooked through. Discard the marinade.
  4. Once cooled, shred or chop the chicken.
  5. In a large bowl, combine 4 cups mixed greens, 1/2 cup chopped celery, 1/2 cup chopped red onion, 1/2 cup dried cranberries, 1/4 cup cashews, 1/4 cup sunflower seeds, and the shredded chicken.
  6. Gently toss the salad with the reserved dressing.
  7. Garnish with chopped green onions, additional cashews, sunflower seeds, and cranberries (optional).
  8. Serve immediately and enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
