How to Make A Bit Of Everything Chicken Salad
- In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Reserve 1/3 of the dressing for later. Marinate 1 pound boneless, skinless chicken breasts in the remaining dressing for at least 30 minutes (or up to 2 hours in the refrigerator).
- Preheat broiler. Place marinated chicken on a baking sheet and broil for 5-7 minutes per side, or until cooked through. Discard the marinade.
- Once cooled, shred or chop the chicken.
- In a large bowl, combine 4 cups mixed greens, 1/2 cup chopped celery, 1/2 cup chopped red onion, 1/2 cup dried cranberries, 1/4 cup cashews, 1/4 cup sunflower seeds, and the shredded chicken.
