How to Make Al Capone Roast
- Preheat oven to 450°F (232°C).
- In a large skillet, brown the Italian sausage over medium heat. Remove from skillet and slice into finger-sized pieces.
- Slice the bell pepper, 1/2 of the onion, and mozzarella cheese into finger-sized pieces.
- Place the sausage, pepper, onion, and cheese in a row along the long end of the steak.
- Slice the remaining 1/2 of the onion and the mushrooms. Mince the garlic. Place the mushrooms and minced garlic on top of the sausage mixture on the steak.
- Season generously with salt and pepper.
- Tightly roll the steak jelly-roll style and secure with toothpicks.
- Slice the remaining half of the bell pepper and onion into finger-sized pieces. Slice the remaining mushrooms.
- Heat olive oil in a 13x9 inch baking dish. Place the rolled steak in the dish. Arrange the remaining sliced peppers, onions, and mushrooms around the steak.
- Sear in the preheated 450°F (232°C) oven for 30 minutes, turning occasionally.
- In a small bowl, mix the tomato paste and water together.
- Reduce oven temperature to 400°F (204°C). Pour the tomato paste mixture evenly over the steak.
- Continue cooking for 45-60 minutes, or until the steak is cooked to your desired doneness.
- Remove from oven, remove toothpicks, and let rest for 10 minutes before slicing and serving.
