How to Make Al Capone Roast

  1. Preheat oven to 450°F (232°C).
  2. In a large skillet, brown the Italian sausage over medium heat. Remove from skillet and slice into finger-sized pieces.
  3. Slice the bell pepper, 1/2 of the onion, and mozzarella cheese into finger-sized pieces.
  4. Place the sausage, pepper, onion, and cheese in a row along the long end of the steak.
  5. Slice the remaining 1/2 of the onion and the mushrooms. Mince the garlic. Place the mushrooms and minced garlic on top of the sausage mixture on the steak.
  6. Season generously with salt and pepper.
  7. Tightly roll the steak jelly-roll style and secure with toothpicks.
  8. Slice the remaining half of the bell pepper and onion into finger-sized pieces. Slice the remaining mushrooms.
  9. Heat olive oil in a 13x9 inch baking dish. Place the rolled steak in the dish. Arrange the remaining sliced peppers, onions, and mushrooms around the steak.
  10. Sear in the preheated 450°F (232°C) oven for 30 minutes, turning occasionally.
  11. In a small bowl, mix the tomato paste and water together.
  12. Reduce oven temperature to 400°F (204°C). Pour the tomato paste mixture evenly over the steak.
  13. Continue cooking for 45-60 minutes, or until the steak is cooked to your desired doneness.
  14. Remove from oven, remove toothpicks, and let rest for 10 minutes before slicing and serving.
