How to Make Ali S Chicken And Sausage Gumbo
- Cook 1.5 lbs boneless, skinless chicken breasts until cooked through. Dice into 1-inch pieces and set aside.
- Slice 1 lb smoked sausage (Andouille recommended) into 1/2-inch thick rounds. Refrigerate.
- Wash and dice 2 medium zucchini into 1/2-inch pieces. Refrigerate.
- In a 6-quart slow cooker, combine: 1 tbsp olive oil, 1 large onion (chopped), 2 celery stalks (chopped), 1 green bell pepper (chopped), 2 cloves garlic (minced), 1 tbsp Cajun seasoning (adjust to taste), 1 tsp dried thyme, 1 bay leaf, 4 cups chicken broth, 1 (14.5 oz) can diced tomatoes (undrained), and the cooked diced chicken. Stir well.
- Cover and cook on low for 6 hours.
- After 6 hours, add the sliced smoked sausage and diced zucchini to the slow cooker.
- Continue cooking on low for another 2 hours, or until the zucchini is tender.
- Serve hot over cooked rice. Garnish with chopped fresh cucumber to cool down the spice, if desired.
