How to Make Alsatian Tempeh Casserole

- Add 1 medium onion, chopped, and cook, stirring frequently, for 5-7 minutes until softened.
- Stir in 1 cup of sauerkraut.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Crumble 1 package (8 oz) Lightlife lemon tempeh burgers into the skillet. Cook for 1-2 minutes until heated through. Season with salt and pepper to taste.
- Coat a 1 1/2-quart casserole dish with cooking spray.
- Add the tempeh and sauerkraut mixture to the casserole dish.
- Spread the mashed potatoes evenly over the tempeh mixture.
- Drizzle the remaining 1/2 tablespoon of olive oil over the potatoes.
- Bake for 30 minutes, then broil for 1-2 minutes, or until the top is lightly browned.
