How to Make Apple Chicken
- Preheat oven to 350°F (175°C).
- Season chicken breasts generously with thyme, salt, and pepper.
- Heat 1 tablespoon of oil in a large oven-safe skillet over medium-high heat. Brown chicken breasts on all sides for about 2-3 minutes per side.
- Remove chicken from skillet and set aside.
- Add remaining 1 tablespoon of oil to the skillet. Add sliced onions and cook until softened, about 3-4 minutes.
- Add sliced apples to the skillet and cook until slightly softened and lightly golden, about 5 minutes, stirring occasionally.
- Pour in apple cider, bring to a simmer, scraping up any brown bits from the bottom of the pan.
- Return chicken breasts to the skillet.
- Cover the skillet and transfer to the preheated oven. Bake for 15-20 minutes, or until chicken is cooked through and no longer pink inside.
- Remove skillet from oven. In a small bowl, whisk together apple cider vinegar and cornstarch until smooth.
- Pour the cornstarch mixture into the skillet and cook, stirring constantly, until the sauce has thickened and become glossy (about 1 minute).
- Transfer the chicken and apples to a serving platter and spoon the sauce over the top.
- Serve immediately and enjoy!
