How to Make Apricot Barbecued Chicken
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1.5 lbs boneless, skinless chicken breasts and 2 cloves minced garlic. Cook until chicken is browned on both sides, about 6-8 minutes.
- Transfer the chicken to a greased 8x8 inch baking dish.
- In a medium bowl, whisk together 1 cup apricot preserves, ½ cup barbecue sauce, ¼ cup water, and 1 packet (1 ounce) dry onion soup mix.
- Pour the apricot barbecue sauce evenly over the chicken in the baking dish.
- Bake, uncovered, in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the chicken is cooked through and the juices run clear. Internal temperature should reach 165°F (74°C).
