How to Make Amazing Thai Peanut Chicken
- In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup peanut butter, 2 tablespoons rice vinegar, and 1/2 teaspoon cayenne pepper (or more, to taste). Set aside.
- Heat 1 tablespoon of oil in a large skillet or wok over high heat.
- Add 1 lb boneless, skinless chicken breasts (cut into 1-inch pieces), 2 cloves minced garlic, and 1 tablespoon grated fresh ginger. Cook, stirring constantly, until chicken is browned on all sides, about 5-7 minutes.
- Add 1/2 cup chopped green onions, 2 cups broccoli florets, and 1 cup sliced bell peppers (any color or combination). Stir to combine.
