Ingredients for Apricot Grape Nuts Bread

  • Dried Apricot
  • 1 cup plain yogurt
  • Post Grape Nuts Cereal
  • Whole Wheat Flour
  • All Purpose Flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Brown Sugar
  • 1 large egg
  • Butter
  • ¼ cup honey

How to Make Apricot Grape Nuts Bread

  1. Preheat oven to 350°F (175°C). Grease an 8x4 inch loaf pan.
  2. In a small bowl, cover dried apricots with boiling water and let soak for 15 minutes.
  3. In a large bowl, pour yogurt over Grape-Nuts cereal. Let soak for 5-10 minutes while preparing other ingredients.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add egg, oil, and honey to the cereal mixture. Stir until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  7. Drain the soaked apricots and chop them finely. Stir into the batter.
  8. Pour batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Once cooled, wrap the bread in wax paper and store at room temperature for several hours or overnight before slicing to allow flavors to meld.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
