How to Make Asian Peanut And Pasta Salad
- Cook pasta according to package directions until al dente. Drain and rinse with cold water; set aside.
- In a high-speed blender, combine 1/2 cup peanuts, orange juice, orange zest, rice vinegar, sesame oil, soy sauce, honey, garlic, and ginger. Blend until completely smooth, stopping to scrape down the sides as needed.
- In a large bowl, combine the cooked pasta, half of the peanut dressing, remaining 1/2 cup peanuts, radishes, carrots, and green onions. Toss gently to coat.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, toss gently again. Serve chilled, topped with the remaining dressing and avocado slices.
