How to Make Apple Apple Cake
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, cream together 2 large eggs, 1 cup turbinado sugar (or brown sugar), ½ cup coconut oil (or olive oil/melted butter), and 1 teaspoon vanilla extract until light and fluffy.
- In a separate bowl, whisk together 2 cups whole wheat flour, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon ground allspice, and a pinch of salt.
- In a small bowl, mash 2 ripe bananas until creamy.
- Add the mashed bananas to the wet ingredients and beat well to combine.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in ½ cup raisins, ½ cup chopped walnuts, and ½ cup dried cranberries.
- Gently fold in 2 cups peeled and chopped apples.
- Pour batter into the prepared baking pan and spread evenly. The batter will be chunky.
- Create a grid pattern on top of the batter using 1 tablespoon sesame seeds. Sprinkle with 1 tablespoon black sesame seeds in the gaps.
- Sprinkle the top with 2 tablespoons turbinado sugar.
