How to Make Asparagus Flan

  1. Preheat oven to 350°F (175°C). Lightly grease a 6-cup ramekin or oven-safe dish.
  2. In a blender, combine eggs, cream, Parmesan cheese, nutmeg, salt, and pepper. Blend until smooth.
  3. Trim the tough ends off the asparagus spears. Blanch the asparagus in boiling salted water for 2-3 minutes, then immediately plunge into ice water to stop the cooking process. Pat dry.
  4. Arrange the asparagus spears in the prepared ramekin.
  5. Pour the egg mixture evenly over the asparagus.
  6. Place the ramekin in a larger baking dish. Pour enough hot water into the larger dish to come halfway up the sides of the ramekin (this creates a bain-marie for even cooking).
  7. Bake for 35-40 minutes, or until the flan is set and lightly golden brown. A knife inserted near the center should come out clean.
  8. Let the flan cool slightly before serving. Garnish with freshly grated Parmesan cheese and a sprinkle of chopped chives (optional).
