How to Make Asparagus Flan
- Preheat oven to 350°F (175°C). Lightly grease a 6-cup ramekin or oven-safe dish.
- In a blender, combine eggs, cream, Parmesan cheese, nutmeg, salt, and pepper. Blend until smooth.
- Trim the tough ends off the asparagus spears. Blanch the asparagus in boiling salted water for 2-3 minutes, then immediately plunge into ice water to stop the cooking process. Pat dry.
- Arrange the asparagus spears in the prepared ramekin.
- Pour the egg mixture evenly over the asparagus.
- Place the ramekin in a larger baking dish. Pour enough hot water into the larger dish to come halfway up the sides of the ramekin (this creates a bain-marie for even cooking).
- Bake for 35-40 minutes, or until the flan is set and lightly golden brown. A knife inserted near the center should come out clean.
- Let the flan cool slightly before serving. Garnish with freshly grated Parmesan cheese and a sprinkle of chopped chives (optional).
