- 1 pound asparagus
- 1/2 cup slivered almonds
- Extra Virgin Olive Oil
- Garlic Cloves
- Salt & Freshly Ground Black Pepper
How to Make Asparagus With Toasted Almonds
- Bring a large pot of salted water (about 4 quarts) to a rolling boil.
- Snap off and discard the tough ends of the asparagus.
- Cut the trimmed asparagus spears on a diagonal into 2-inch pieces.
- Add asparagus to the boiling water and cook until crisp-tender, about 4 minutes.
- Immediately drain the asparagus and rinse under cold water to stop the cooking process.
- Pat the asparagus thoroughly dry with paper towels.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add 1/2 cup slivered almonds to the skillet and cook, stirring frequently, until lightly golden brown and fragrant, about 3-5 minutes. Watch carefully to prevent burning.
- Transfer the toasted almonds to a plate and set aside.
- Add 1 clove minced garlic to the skillet and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic.
- Add the asparagus to the skillet and cook, stirring occasionally, until heated through, about 5 minutes.
- Stir in the toasted almonds.
- Season generously with salt and freshly ground black pepper to taste.
- Serve immediately and enjoy!
