How to Make Audrey S Special Stew
- In a large pot or Dutch oven, brown 1.5 lbs of beef stew meat in 2 tablespoons of olive oil over medium-high heat. Break up any clumps of meat with a spoon.
- Drain off any excess grease from the pot.
- Add 1 large onion (chopped), 2 cloves garlic (minced), 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can tomato sauce, 1 cup beef broth, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the pot.
- Bring to a simmer, then reduce heat to low, cover, and cook for 2 hours, or until meat is almost tender. (For slow cooker: transfer all ingredients to a slow cooker and cook on low for 6-8 hours or high for 3-4 hours).
- Add 2 cups of cubed potatoes, 1 cup of chopped carrots, and 1 cup of chopped celery to the pot. Continue to cook until vegetables are tender, about 30-45 minutes (or 1 hour for slow cooker).
- Stir in 2 cups of cooked rice before serving. Garnish with fresh parsley, if desired.
