How to Make Authentic Lumpia
- In a large bowl, combine 1 lb ground pork, 1/2 cup finely chopped carrots, 1/4 cup finely chopped onion, 1/4 cup finely chopped cabbage, 2 cloves minced garlic, 1 tbsp soy sauce, 1 tbsp fish sauce, 1 tsp black pepper, and 1/2 tsp salt. Mix thoroughly.
- If possible, source lumpia wrappers from an Asian grocery store for optimal results. Alternatively, spring roll wrappers can be used.
- Allow the mixture to sit for at least 30 minutes to allow flavors to meld.
- Place approximately 2 tablespoons of the filling in the center of each lumpia wrapper. Fold in the sides, then roll tightly from the bottom up. Moisten the top edge with water to seal.
- Heat about 2 inches of vegetable oil in a large skillet or wok over medium-high heat (approximately 350°F).
- Carefully place the lumpia in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, approximately 3-4 minutes per side.
- Remove the lumpia from the oil and place them on a wire rack to drain excess oil.
- Serve immediately with your choice of dipping sauce: sweet and sour sauce, a mixture of crushed garlic and vinegar, or even a spicy sriracha mayo!
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
