  • 1/2 pound bacon
  • Chicken Broth
  • 8 ounces sliced mushrooms
  • 2 cups diced potatoes
  • 1 medium onion, chopped
  • Cream Of Mushroom Soup
  • 1 cup milk

How to Make Bacon And Mushroom Chowder

  1. Cook 1/2 pound bacon until crisp. Remove bacon and set aside, reserving 2 tablespoons of bacon grease in the pot.
  2. Add 1 medium onion, chopped, to the pot with the bacon grease and cook until softened, about 5 minutes. Add 8 ounces of sliced mushrooms and cook for another 5 minutes until softened.
  3. Stir in 6 cups of chicken stock and 2 cups of diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Return the cooked bacon to the pot.
  5. Stir in 1 cup of milk, 10.75 ounces can of condensed cream of mushroom soup, salt, and pepper to taste. Heat through gently – do not boil.
