Ingredients for Bacon Fontina Mashed Potatoes

  • Red Potatoes
  • Fresh Garlic
  • Unsalted Butter
  • Heavy Whipping Cream
  • 4 slices bacon, cooked and crumbled
  • Fresh Chives
  • Fresh Ground Black Pepper
  • 1/2 cup shredded Fontina cheese

How to Make Bacon Fontina Mashed Potatoes

  1. Wash and scrub 1.5 lbs of small red potatoes thoroughly. No need to peel!
  2. Place potatoes in a large saucepan and cover with cold water. Bring to a boil over high heat.
  3. Reduce heat to medium-low and simmer for 20-25 minutes, or until potatoes are easily pierced with a fork.
  4. Drain the potatoes in a colander and return them to the saucepan.
  5. Over medium heat, gently shake the saucepan for 15-20 seconds to remove excess moisture. Do not mash yet!
  6. Remove the potatoes from the heat and gently mash or rice them using a potato masher or ricer. Leave some texture for a rustic feel.
  7. While the potatoes are cooking, prepare the sauce: In a small saucepan, melt 1/4 cup of butter over medium heat. Add 2 minced cloves of garlic and cook for 1 minute, until fragrant.
  8. Stir in 1/2 cup of heavy cream and heat through. Do not boil.
  9. Pour the cream sauce over the mashed potatoes and stir to combine thoroughly.
  10. Stir in 4 slices of cooked and crumbled bacon.
  11. Season generously with salt and freshly ground black pepper.
  12. Taste and adjust seasoning as needed. Add more salt, pepper, or cream to your preference.
  13. Spoon the mashed potatoes onto serving plates.
  14. Top with 1/2 cup of shredded Fontina cheese and serve immediately.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
