Ingredients for Bacon Fontina Mashed Potatoes
- Red Potatoes
- Fresh Garlic
- Unsalted Butter
- Heavy Whipping Cream
- 4 slices bacon, cooked and crumbled
- Fresh Chives
- Fresh Ground Black Pepper
- 1/2 cup shredded Fontina cheese
How to Make Bacon Fontina Mashed Potatoes
- Wash and scrub 1.5 lbs of small red potatoes thoroughly. No need to peel!
- Place potatoes in a large saucepan and cover with cold water. Bring to a boil over high heat.
- Reduce heat to medium-low and simmer for 20-25 minutes, or until potatoes are easily pierced with a fork.
- Drain the potatoes in a colander and return them to the saucepan.
- Over medium heat, gently shake the saucepan for 15-20 seconds to remove excess moisture. Do not mash yet!
- Remove the potatoes from the heat and gently mash or rice them using a potato masher or ricer. Leave some texture for a rustic feel.
- While the potatoes are cooking, prepare the sauce: In a small saucepan, melt 1/4 cup of butter over medium heat. Add 2 minced cloves of garlic and cook for 1 minute, until fragrant.
- Stir in 1/2 cup of heavy cream and heat through. Do not boil.
- Pour the cream sauce over the mashed potatoes and stir to combine thoroughly.
- Stir in 4 slices of cooked and crumbled bacon.
- Season generously with salt and freshly ground black pepper.
- Taste and adjust seasoning as needed. Add more salt, pepper, or cream to your preference.
- Spoon the mashed potatoes onto serving plates.
- Top with 1/2 cup of shredded Fontina cheese and serve immediately.
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
