How to Make Baked Chicken N Cheese Rollups

  1. Preheat oven to 375°F (190°C).
  2. Season both sides of 4 boneless, skinless chicken breasts (about 6 oz each) with salt and pepper.
  3. In a bowl, combine 4 oz provolone cheese, chopped; 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped; and 2 tbsp fresh basil, chopped.
  4. Evenly divide the cheese mixture among the chicken breasts, placing it in the center of each.
  5. Tightly roll up each chicken breast and secure with toothpicks.
  6. In a large nonstick skillet, melt 2 tbsp butter over medium-high heat.
  7. Add the chicken roll-ups and cook for approximately 2 minutes per side, until lightly browned.
  8. Transfer the chicken to an ungreased jelly-roll pan.
  9. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  10. Meanwhile, prepare the sauce: In a small bowl, whisk together 1 tbsp chicken broth and 1 tbsp all-purpose flour until smooth.
  11. In the same skillet used for the chicken, combine 1/2 cup dry white wine and 1/4 cup chicken broth.
  12. Bring to a boil, scraping up any browned bits from the bottom of the pan.
  13. Reduce heat to medium-low and simmer for 4 minutes, or until slightly reduced.
