How to Make Baked Chicken N Cheese Rollups
- Preheat oven to 375°F (190°C).
- Season both sides of 4 boneless, skinless chicken breasts (about 6 oz each) with salt and pepper.
- In a bowl, combine 4 oz provolone cheese, chopped; 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped; and 2 tbsp fresh basil, chopped.
- Evenly divide the cheese mixture among the chicken breasts, placing it in the center of each.
- Tightly roll up each chicken breast and secure with toothpicks.
- In a large nonstick skillet, melt 2 tbsp butter over medium-high heat.
- Add the chicken roll-ups and cook for approximately 2 minutes per side, until lightly browned.
- Transfer the chicken to an ungreased jelly-roll pan.
- Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Meanwhile, prepare the sauce: In a small bowl, whisk together 1 tbsp chicken broth and 1 tbsp all-purpose flour until smooth.
- In the same skillet used for the chicken, combine 1/2 cup dry white wine and 1/4 cup chicken broth.
- Bring to a boil, scraping up any browned bits from the bottom of the pan.
- Reduce heat to medium-low and simmer for 4 minutes, or until slightly reduced.
- Stir in the flour mixture and cook, stirring constantly, until thickened (about 4-5 minutes).
- Serve the chicken roll-ups drizzled with the sauce and garnished with fresh basil.
