How to Make Baked Lentils With Cheese
- Preheat oven to 375°F (190°C).
- In a large bowl, combine 1 cup dried green lentils, 1 medium onion (chopped), 2 cloves garlic (minced), 1 tbsp olive oil, 1 tsp dried oregano, 1/2 tsp dried thyme, 1/4 tsp salt, 1/4 tsp black pepper, 1 (14.5 oz) can diced tomatoes (undrained), 1 cup vegetable broth, and 1 bay leaf.
- Pour the lentil mixture into a greased 9x13 inch glass baking dish. Cover with foil.
- Bake for 30 minutes.
- Remove from oven, uncover, and stir in 1 cup chopped carrots and 1 cup chopped celery.
- Cover with foil again and bake for another 40 minutes.
