How to Make Banana And Walnut Muffins
- Preheat oven to 200°C (400°F). Grease a 12-cup muffin tin with margarine or cooking spray.
- In a large mixing bowl, mash 3 ripe bananas. Add 1/2 cup granulated sugar, 1 teaspoon vanilla extract, and 1/4 cup softened margarine. Mix well.
- In a separate small bowl, lightly beat 1 large egg with a fork.
- Stir the beaten egg and 1/4 cup milk into the banana mixture.
- In a separate bowl, whisk together 1 1/2 cups all-purpose flour and 1 teaspoon baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in 1/2 cup chopped walnuts.
- Fill the prepared muffin cups about 2/3 full. Sprinkle the remaining 1/2 cup chopped walnuts over the tops of the muffins.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
