Ingredients for Barbecued Chicken

  • 2 lbs boneless, skinless chicken thighs
  • Vegetable Oil
  • Chicken Broth
  • ½ cup ketchup
  • Cider Vinegar
  • ¼ cup brown sugar
  • 1 tablespoon curry powder
  • 1 tablespoon paprika
  • 1 teaspoon salt (plus more for seasoning)
  • Ground Mustard
  • ½ teaspoon chili powder
  • ¼ teaspoon black pepper (plus more for seasoning)
  • Onion Soup Mix

How to Make Barbecued Chicken

  1. Pat 2 lbs boneless, skinless chicken thighs dry with paper towels. Season generously with salt and pepper.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Brown chicken in batches for 2-3 minutes per side, until golden brown. Set aside.
  3. Preheat oven to 350°F (175°C).
  4. In a 9x13 inch baking dish, combine 1 cup chicken broth, ½ cup ketchup, ¼ cup apple cider vinegar, ¼ cup brown sugar, 1 tablespoon curry powder, 1 tablespoon paprika, 1 teaspoon salt, 1 teaspoon Dijon mustard, ½ teaspoon chili powder, and ¼ teaspoon black pepper.
  5. Arrange the browned chicken in the baking dish, ensuring it's nestled in the sauce.
  6. Sprinkle 1 packet (1 ounce) onion soup mix evenly over the chicken.
  7. Cover the baking dish with aluminum foil.
  8. Bake for 55-65 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork.
  9. Remove foil and let rest for 10 minutes before serving. Spoon the delicious gravy over the chicken.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
