How to Make Basil Chive Red Potato Mash

  1. Place 2 pounds of red potatoes (unpeeled) in a medium saucepan. Add enough cold water to cover by 2 inches.
  2. Add 1 teaspoon of salt to the water.
  3. Bring the water to a boil, then reduce heat and simmer until potatoes are tender when pierced with a fork (about 25 minutes).
  4. Drain the potatoes thoroughly and return them to the saucepan.
  5. Add 1/2 cup of heavy cream and 4 tablespoons of butter. Stir gently and cook over very low heat until the butter is melted and the cream is warmed through (about 2-3 minutes).
  6. Stir in 1/4 cup chopped fresh chives and 1/4 cup chopped fresh basil.
  7. Using a potato masher or fork, coarsely mash the potatoes to your desired consistency.
  8. Season generously with salt and pepper to taste.
