How to Make Basil Grilled Chicken
- Press 3/4 teaspoon black pepper into the meatier sides of two chicken breast halves.
- In a small bowl, combine 1/3 cup (60g) melted butter and 1/4 cup (10g) chopped fresh basil. Stir well.
- Lightly brush the melted butter-basil mixture onto both sides of the chicken breasts.
- In a separate small bowl, combine 1/2 cup (113g) softened butter, 2 tablespoons (10g) chopped fresh basil, 1 tablespoon (5g) grated Parmesan cheese, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Using an electric mixer on low speed, beat the butter mixture until smooth and well combined.
- Transfer the basil-butter mixture to a small serving bowl and set aside.
- Preheat your grill to medium heat.
- Grill the chicken breasts for 8-10 minutes per side, basting frequently with the remaining melted butter-basil mixture from step 3.
- Serve the grilled chicken immediately, topped with the basil-butter mixture from step 6.
- Garnish with fresh basil sprigs, if desired.
