How to Make Beef Roll Up

  1. Season 1 lb cube steaks generously with salt and pepper.
  2. Marinate cube steaks in 1/2 cup French dressing for 30-60 minutes at room temperature.
  3. In a saucepan, simmer 1 cup chopped carrots, 1 cup chopped celery, and 1/2 cup chopped onion in 1/2 cup water until tender-crisp, about 7-8 minutes.
  4. Drain the vegetables thoroughly.
  5. Pat the marinated steaks dry with paper towels.
  6. Place approximately 1/3 cup of the vegetable mixture onto the center of each steak.
  7. Roll up each steak tightly, jelly-roll style.
  8. Cut 6 slices of bacon in half crosswise, yielding 12 half-slices.
  9. Wrap two bacon half-slices around each roll-up, securing with a wooden toothpick.
  10. Grill the roll-ups over medium-high heat (or broil 3-4 inches from the heat source) for 20-25 minutes, turning occasionally, until the bacon is crispy and the beef is cooked through. Internal temperature should reach 160°F (71°C).
