  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 10 ounces (280g) fresh spinach
  • 1 teaspoon ground cumin
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 tablespoon butter

How to Make Arabian Spinach

  1. Heat 2 tablespoons of olive oil in a large wok or skillet over medium heat. Add 1 medium onion, thinly sliced, and sauté for 5 minutes, until softened.
  2. Add 2 cloves of minced garlic and 1 teaspoon of ground cumin. Sauté for another minute until fragrant.
  3. Add 10 ounces (280g) of fresh spinach, a handful at a time, stirring until the leaves wilt and are tender. This should take about 3-5 minutes.
  4. Stir in 1 (15-ounce) can of chickpeas, drained and rinsed, 1 tablespoon of butter, salt, and pepper to taste. Cook for another 2 minutes, allowing the flavors to meld.
