How to Make Criss Cross Potatoes
- Preheat oven to 350°F (175°C).
- Scrub 2 lbs of russet potatoes thoroughly and cut them in half lengthwise.
- Using a sharp knife, make diagonal slashes about 1/8 inch deep into the cut side of each potato half, creating a criss-cross pattern. Be careful not to cut all the way through.
- In a small bowl, melt 2 tablespoons of butter. Alternatively, use cooking spray.
- Brush the cut surface of the potatoes generously with melted butter (or spray with cooking spray).
- Season generously with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Arrange the potatoes cut-side up in a single layer in a large baking dish.
- Bake for 60 minutes.
- Remove from oven, brush with an additional 1 tablespoon of melted butter (or more cooking spray), and sprinkle with 1/2 teaspoon of paprika.
- Return to the oven and bake for another 15 minutes, or until golden brown and tender.
- Serve immediately. Garnish with sour cream and chives, if desired.
